Double Chocolate & Mini Egg Easter Cookies

Hello 🙂

Apologies if this years Easter baking post may be cheating slightly.. These cookies were a recipe I tried last year! As I won’t have time to bake this years’ creation till the weekend I thought we work arrears haha! But regards, these are chocolate and mini eggs filled for an Easter treat which I do hope you’ll enjoy 🙂

– Double Chocolate & Mini Egg Easter Cookies –

It’s safe to safe that cookies do appear in here a fair bit; mostly as I’m still on the search for the perfect recipe..!

For this bake I tried the Hummingbird Bakerys’ recipe which I remember always using years ago! So this is the original Hummingbird Bakery recipe with some adding Mini Eggs! I thought is was a good chance to try a new recipe and filling for Easter..


Y O U   W I L L    N E E D  :

– 50g unsalted butter     – 450g dark chocolate, chopped      – 2 eggs     – 170g brown sugar     – 1/4 tsp vanilla     – 85g plain flour     – 1/2 tsp salt     – 1/2 tsp baking powder     – 2 packets of Mini Eggs

Preheat the oven to 170°C/325°F/Gas Mark 3

Put the butter and half the chocolate in a heatproof bowl over a saucepan of simmering water (do not let the bowl touch the water) until the chocolate is melted.

Mix the eggs, sugar and vanilla extract in an electric mixer or use a handheld electric whisk. Pour in the chocolate mixture, beating on a slow speed until mixed.

Sift the flour, salt and baking powder into a separate bowl, then stir into the chocolate mixture in three stages. Finally, mix in the remaining chocolate.

Gently crush 1 packet of Mini Eggs and add to the mixture distribution evenly.

Line two baking trays with greaseproof paper and put six equal amounts of cookie dough spaced evenly apart on each. Place a few more whole eggs onto each cookie. Bake for 10–15 minutes until the tops look glossy and start to crack.


And there you have a little Easter twist for some scrumpcious double chocolate cookies, I really do like this recipe as it keeps them slightly chewy inside- I must try the original recipe asap!
