STEP 3 – In a medium pan, on a low heat, gentle melt the butter. Once melted add in the flour mixing for 1 min- remove from the heat but don’t turn hob off!
STEP 4 – Off the heat stir in the milk a little at a time until a smooth sauce forms. Return mixture to a medium heat stirring continually as the mixture thickens, this will take 8-10 mins. Once the mixture is boiling turn off the heat.
STEP 5 – Stir in the mature grated cheese, meat and tomatoes to the sauce- finally adding seasonings to taste.
STEP 6 – Drain the pasta and place into a medium baking dish, pout over the sauce mixture and combines all together. Sprinkle over the grated mozzarella (+ extra tomatoes or breadcrumbs!?) and bake through for 25-30 mins!
