Oddly, I’m not the biggest fan of Christmas pudding; but these are in between Christmas puddings & mince pies with some custard thrown in there too! I wanted to try some different to mince pies this year, gladly they turned out ok.
As always, I’m not claiming any of these ideas or methods as my own!

– Christmas Pudding & Custard Muffins –
(aprox 12 muffins )
Y O U W I L L N E E D
6 oz softened butter / 6 oz caster sugar / 2 tbsp vanilla / 3 large eggs beaten / 6oz self-raising flour / 8 tbsp mincemeat / 2 ready made custard pots , 1 tsp per muffin
M E T H O D
⋆ pre-heat your oven to 170 Fan / 190’C and line a 12 hole muffin tin
⋆ cream the butter and sugar together until light and fluffy, gradually add eggs & vanilla
⋆ sift in the flour, mixing well again – finally adding in the mincemeat. If the mixture is too thick add a dash a milk!
⋆ place a tablespoon of mixture into the bottom of each case and spread slightly up the sides to form a dip, then add a teaspoon of custard. Cover each with the remaining batter
⋆ bake for 20 – 25 mins until golden brown, allow to cool fully
To decorate I made some quick white icing (following packet instructions) and added some star decorations – you can finish however you want!

sadly I left it till they had cooled to cut them open so the custard has sunk into the mixture- apologies!
Now, I know these aren’t proper Christmas puddings- but I assure you they taste pretty similar! One thing to note is that they will appear slightly doughy on the inside due to the liquid custard! But either way I was pleasantly surprised with how these worked!
